It is also helpful to increase the liquid content in coconut flour recipes. For the best results, we suggest you find recipes that were written specifically for Coconut Flour. For extended freshness, refrigerate after opening. Coconut Flour lends a rich texture and natural sweetness to baked goods. It can be used as a substitute for up to about one third of the flour in most standard recipes. Due to its high fiber content, Coconut Flour absorbs a lot of liquid, and you will generally need to increase the liquid called for in the recipe by about one third as well.

    SANE Coconut Chocolate Cake

    1/2 cup SANE Coconut Flour
    1/4 cup Raw Organic Shredded Coconut
    — 1 tsp baking powder
    6 TBSP butter
    1/2 cup Raw Organic Extra Rich Cacao Powder
    1 cup SANE Xylitol
    1/2 tsp Extra Fine Himalayan Pink Salt
    1 tsp Raw Organic Wild Bourbon Vanilla Bean Powder
    1 tsp Raw Organic Cassia Cinnamon Powder
    1/4 cup Chocolate Bites
    6 large eggs
    2 TBSP Garden in My Glass Sugar-Free Fruit & Veggie Mix
    1 tsp Perfect Coconut Oil

    TIP: For best results, enjoy this as a starting point and adjust key flavoring ingredients such as SANE sweeteners, vanilla, cinnamon, etc. slightly up or down according to your tastes.

    Preheat the oven to 350°F. Grease an 8 ½" x 4 1/2" loaf pan or an 8" square cake pan with Perfect Coconut Oil.
    Sift together the SANE Coconut Flour and baking powder, mixing to combine; set aside.
    In a large, microwave-safe bowl, melt the butter with the Raw Organic Extra Rich Cacao Powder, stirring until well blended.
    Whisk the SANE Xylitol, Extra Fine Himalayan Pink Salt, Raw Organic Wild Bourbon Vanilla Bean Powder, Garden in My Glass powderChocolate BitesRaw Organic Cassia Cinnamon Powder and eggs into the butter-cocoa mixture. Add the coconut flour and baking powder, whisking until smooth.
    Pour the batter into the prepared pan. Let it rest for 10 minutes.
    Bake the loaf or cake until set, and a cake tester inserted into the middle comes out clean. This will take 35 to 45 minutes for the loaf pan, or 30 to 35 minutes for the square pan.
    — Cool the cake in the pan for 30 minutes before turning it out onto a rack to cool completely. The cake is easiest to slice when it is completely cool.

    Yield: one 8 1/2" x 4 1/2" loaf OR one 8" square cake.
