  • Luo Han Guo, also known as monk fruit, is a rare fruit that is gaining popularity as a sugar substitute. Monk fruit contains sweet substances called mogrosides. Mogrosides are naturally much sweeter than sugar, but are non caloric and do not affect blood sugar levels. This makes Luo Han Guo a great alternative for those looking for a healthy sugar substitute. Luo Han Guo is a cousin of the cucumber, and a member of the gourd family of fruits. It's a round and smooth, dusty green-brown fruit that is covered with fine soft hairs, and a hard but thin shell. The fruit is used only after it is dried, and can be processed into a powder that is naturally rich in mogrosides.     SANE Cheese Cake (Crust)

    Ingredients
    1/2 cup melted Perfect Coconut Oil
    — 2 eggs
    1/4 tsp Extra Fine Himalayan Pink Salt
    3/4 cup SANE Coconut Flour
    — A "bit" of SANE Luo Han Guo (see below)

    1/4 tsp Raw Organic Wild Bourbon Vanilla Bean Powder
    1/4 tsp Raw Organic Cassia Cinnamon Powder

    Directions
    — Preheat oven to 400 degrees.
    — In a medium bowl beat butter, eggs, SANE Luo Han GuoRaw Organic Wild Bourbon Vanilla Bean PowderRaw Organic Cassia Cinnamon Powder, and Extra Fine Himalayan Pink Salt together with a fork.
    — Add SANE Coconut Flour. Stir until dough holds together.
     Finally, add SANE Luo Han Guo, starting with 1/4 tsp, and adding additional SANE Luo Han Guo 1/4 tsp at a time until desired level of sweetness is reached. SANE Luo Han Guo is MUCH sweeter than sugar, so you will not need to use a lot of it.
    — Gather the dough into a ball, then pat into a 9″ greased pie pan.
    — Prick the dough with a fork.
    — Bake for 8-10 minutes or until lightly brown. Let cool.

    TIP: For best results, enjoy this as a starting point and adjust key flavoring ingredients such as SANE sweeteners, vanilla, cinnamon, etc. slightly up or down according to your tastes.

    SANE Cheese Cake (Filling)

    Ingredients
    — 3 packages (1 and 1/2 lbs) all natural cream cheese (room temperature)
    4 eggs (preferably room temperature)
    1/2 TBSP Raw Organic Wild Bourbon Vanilla Bean Powder
    1/2 TBSP all natural lemon juice
    1 1/3 cup SANE Erythritol
    — 1/4 cup all natural sour cream

    TIP: For best results, enjoy this as a starting point and adjust key flavoring ingredients such as SANE sweeteners, vanilla, cinnamon, etc. slightly up or down according to your tastes.

    Instructions (Filling)
    — Heat oven to 400 F (or to 350 F if you're using a water bath (see below)). TIP: If you have bricks or a pizza stone or unglazed ceramic tile*, put them on the lower rack of the oven. This will hold the heat in the oven. This is good for cheesecakes not baked in a water bath.
    — Put cream cheese in mixing bowl, and beat until fluffy. Add other ingredients, scraping the bowl and beaters each time (this is very important), fully incorporating each ingredient. When all ingredients are combined, scrape one more time, beat one more minute, and pour mixture into pan over crust.
    Instructions for water bath: Wrap the bottom and sides of the springform pan in foil, put it in a baking pan and pour boiling water around the sides. Bake at 350 F for 60 to 90 minutes, checking often. When the cake is firm to touch but slightly soft in the center, or the center reaches 155 F, remove from oven.
    Instructions for non-water bath: For this method, you start the cake at a high temperature, and it slowly drops. If you have stoneware, bricks, etc, this allows it to happen at a slower rate, and I get better results in less time. Put the cheesecake on a sheet pan in case of drippage. After putting the cheesecake in the oven at 400 F, turn the oven down to 200 F. Bake for 60 to 90 minutes, checking often after an hour. When the cake is firm to touch but slightly soft in the center, or the center reaches 155 F, remove from oven.
    — Chill completely. 

    Makes 16 servings.
